Inspiration is in the Streets 'Eating in the City' is theme chosen for Madrid Fusion 2014 (January 27 to 29).
With guest cuisines from Flanders and Andean countries (Bolivia, Peru, Chile).

"Inspiration is in the Street is the common thread woven through the lectures, demonstrations, master classes, tastings and conferences. Over 100 international chefs, with 15 countries represented, and 30 products in the spotlight.
The urban cuisine trend, contemplated from every angle, will be the focus of interest at this edition of a viscerally cosmopolitan gastronomic conference. Large metropolises (Istanbul, Bangkok, Lima, Washington, Tokyo, NY, Paris, Buenos Aires, Mexico City) and small cities (Bruges, Girona, Agrigento) will be the inspiration for the great chefs.
Over three days, chefs such as Joan Roca, Quique Dacosta and Gert de Mangeleer will talk about culinary creativity from an urban point of view. They will explore city restaurants that look to the country, such as those of Eneko Atxa and Pascal Barbot. Or to the sea, in the case of Ángel León, Flemish Belgian Filip Claeys and the Sicilian star Pino Cuttaia. And there are also those who reject the city and base themselves solely on the rural aspect, such as the Flemish Belgian Kobe Desramaults and veteran Michel Bras. The apogee of bars will be analysed through two very different examples: Minibar (Washington) and StreetXo. And they will reflect on the trend of the young chefs and their hipster establishments in the style of Septime and Chez José.
Andoni Aduriz and the neuroscientists Luis Castellanos and Japanese native Adrián David Cheok will talk about the new gastronomic sensations in the digital cities 2.0.
There will be time to discover new culinary territories. The ANDEAN AXIS will be represented by Virgilio Martínez (Central. Lima), Rodolfo Guzmán (Boragó. Santiago de Chile) and new star chef Kamila Seidler together with Michelangelo Cestari (Gustu. La Paz).
And from Thailand comes Duangporn Songvisava, Asia's best chef, according to 50Best."
In addition Tasting Spain segment will focus on traditional cooking from Spain.
