If you don't want to think that your food was once a living thing, Cannibal Beer and Butcher, a New York eaterie should not be on your restaurant shortlist.
On the other hand, if boudin blanc (or noir), steak tartare, merguez makes you happy to leave the office or the house for lunch consider choosing Pigs Head Cuban (slow roasted pig head), Porchetta Spiced Pork Rinds or Lamb Tartare on lunch menu.
