What is Chablis but Chardonnay under another name.
For many of the older generations here in the US, Chablis is synonym with Jug White Wine or something to make a sauce with so not high on the pecking order.
Cross the Atlantic and get to the Chablis area in Burgundy and you will find proud people, amazing food and great whites...
A great example of local pride and great wines is Domaine Daniel Etienne Defaix which shows its colors in picture from its shop above (copyright Daniel Etienne Defaix).
The Defaix family has been in the area for about 3 centuries and his a local food and wine powerhouse with besides wine, restaurants, an hotel plus mustard, wine bars, escargots (of course) in Chablis and a few other things under their wings.
I cannot wait to pay them a visit. I have some family roots in the region after all, in Cote d'Or.
One more stop on my ever growing list, I better get started soon.
