With 'La Chivita', a goat cheese from the Asturias, another blog day in Spain

This goat cheese, 'La Chivita', comes from the very picturesque Picos de Europa area in the Asturias (Northern Spain) whose contours are defined by a limestone range over 20 miles long. The cheese is semi-soft with solid flavors. Let it sit room temperature for a bit before eating and have some crusty bread handy.
While looking for more details on this cheese, I actually discovered Miguel & Valentino based in Bethesda, Maryland. They distribute gourmet foods from Spain including many cheeses that I still have to find and taste.
The Hotel Posada Del Valle surrounded by its own organic farm looks like a nice place to stay if you visit this region.
